Gluten Free Pineapple Upside Down Cake

Ingredients
- ¼ cup butter
- 1 tablespoon oil
- 1 cup gluten free oats
- ½ cup fonio flour
- 1 teaspoon xanthan gum
- ½ teaspoon baking soda
- ½ teaspoon baking powder
- ¼ teaspoon salt
- ½ cup brown sugar
- 1 egg
- 1 teaspoon vanilla
- 1 cup chocolate chips
Instruction
- Preheat oven to 350°F.
- In a bowl mix oats, fonio flour, xanthan gum, baking soda, baking powder and salt.
- In another bowl melt butter and add oil. Add egg and vanilla and dry ingredients, beat well until blended.
- Stir in oat and chocolate chip to the mixture. Let dough rest for 20 minutes.
- On a greased cookies sheets drop dough.
- Bakes 10 to 18 minutes or until lightly brown.
- Cool 5 min and remove from cookies sheets.
