- 1/2 cup fonio
- 1 cup milk
- 1/4 tsp xanthan gum
- 2 tablespoons sugar
- 1/8 teaspoon salt
- 1/4 teaspoon vanilla
- 1/8 teaspoon cinnamon
- 2 teaspoons oil
Combine the fonio flour, baking soda, baking powder, xanthan gum, cinnamon and salt in a medium bowl.
In a separate bowl, whisk together the eggs, milk, vanilla and oil.
Stir wet ingredients into dry ingredients until smooth.
Heat a griddle or pan and
Pour the mixture onto the hot griddle or pan, flip when bubbly and edges are slightly dry, about 3 – 4 minutes per side
