Makes 12 cookies

• ¼ cup butter
• 1 tablespoon oil
• 1 cup gluten free oats
• ½ cup fonio flour
• 1 teaspoon xanthan gum
• ½ teaspoon baking soda
• ½ teaspoon baking powder
• ¼ teaspoon salt
• ½ cup brown sugar
• 1 egg
• 1 teaspoon vanilla
• 1 cup chocolate chipsInstructions
1. Preheat oven to 350°F
2. In a bowl mix oats, fonio flour, xanthan gum, baking soda, baking powder and salt.
3. In another bowl melt butter and add oil. Add egg and vanilla and dry ingredients, beat well until blended.
4. Stir in oat and chocolate chip to the mixture. Let dough rest for 20 minutes
5. On a greased cookies sheets drop dough
6. Bakes 10 to 18 minutes or until lightly brown
7. Cool 5 min and remove from cookies sheets
