Breakfast Fonio with Coconut Milk

Serves 3

Total time: 10 to 15 Minutes

Ingredients

  • 1/2 cup uncooked fonio
  • 2 cups light coconut milk
  • 1 tablespoon light brown sugar
  • 1/8 teaspoon salt
  • 1 cup raspberries
  • 3 tablespoons honey

    Preparation

    • Combine fonio, coconut milk, 2 tablespoons water, brown sugar, and salt in a medium saucepan, and bring to a boil. Reduce heat, and simmer 10 minutes or until liquid is absorbed, stirring occasionally. Stir mixture constantly during the last 2 minutes of cooking.
    • Place fonio mixture in each bowls. Top each serving with raspberries and honey. Serve warm.
