Seafood Fried Fonio

Ingredients

  • 1 cup Lanfala fonio grain
  • 1 cup water
  • 500 g seafood mix (calamari, mussels, prawns, crab sticks)
  •  5 tbsp olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp white ground pepper
  • 1 teaspoon ginger, minced
  • 1 tomato, chopped
  • 1 tbsp tomato paste
  • 1 Green pepper, sliced
  • salt to taste

Instructions

  • Heat olive oil in a pan over medium heat. Sauté onion until lightly browned, then add tomato. Stir in garlic, ginger, white pepper, tomato paste and salt.
  • Add seafood mix, continue stirring for 2 minutes.
  • Add fonio grain and water. Bring to boil, reduce heat, and simmer for 5 minutes.
  • Remove Mussels and set aside for garnish.
  • Serve fried fonio with green pepper slices to garnish.
