Gluten Free Fonio Cookies

Ingredients

  • ¼ cup butter
  • 1 tablespoon oil
  • 1 cup gluten free oats
  • ½ cup fonio flour
  • 1 teaspoon xanthan gum
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • ½ cup brown sugar
  • 1 egg
  • 1 teaspoon vanilla
  • 1 cup chocolate chips

Instruction

  • Preheat oven to 350°F.
  • In a bowl mix oats, fonio flour, xanthan gum, baking soda, baking powder and salt.
  • In another bowl melt butter and add oil. Add egg and vanilla and dry ingredients, beat well until blended.
  • Stir in oat and chocolate chip to the mixture. Let dough rest for 20 minutes.
  • On a greased cookies sheets drop dough.
  • Bakes 10 to 18 minutes or until lightly brown.
  • Cool 5 min and remove from cookies sheets.
