Gluten free Fonio Pancake‏

Make 6 small pancakes

Ingredients

  • 1/2 cup fonio
  • 1 cup milk
  • 1/4 tsp xanthan gum
  • 2 tablespoons sugar
  • 1/8 teaspoon salt
  • 1/4 teaspoon vanilla
  • 1/8 teaspoon cinnamon
  • 2 teaspoons oil

Instruction

  • Combine the fonio flour, baking soda, baking powder, xanthan gum, cinnamon and salt in a medium bowl.
  • In a separate bowl, whisk together the eggs, milk, vanilla and oil.
  • Stir wet ingredients into dry ingredients until smooth.
  • Heat a griddle or pan.
  • Pour the mixture onto the hot griddle or pan, flip when bubbly and edges are slightly dry, about 3 – 4 minutes per side.
  • Serve hot.
